Again, late on the post... but I thought it would be a good idea to post about my Guinness and Bailey's cupcakes that I discovered about a year and a half ago in honor of St Patrick's day.
These cupcakes are wonderful to make, especially now that I have a Kitchen Aid stand mixer. The best part is that it only requires half a bottle of Guinness for an entire batch... so that leaves the other half for the baker!
I don't remember how I stumbled across these beauties, but it was definitely a love at first sight. How could you go wrong with combining one of the greatest beers ever, with Irish cream and CUPCAKES!? Well, frankly my dear, you can't.
On my first attempt, I tried to follow the recipe to the "T"... by hallowing the cupcakes and filling it with a homemade ganache filling. Well, I don't think I was nearly patient enough with the ganache because the chocolate and the cream never came together and made ganache. Instead, the first round of cupcakes just had extra Irish Cream flavored frosting on them :)
Even Pixie is a fan of the frosting! She goes nuts when she sees them. Silly piggie.
